Vegan Delicious Barley Soup

Vegan Delicious Barley Soup by Happy Zoe:
12 cup spring water
6 Tablespoons hulled barley
2 parsnips
2 leeks
... 1/2 medium celery root
8 potatoes diced
4 organic carrots
2 tablespoons organic gluten free soy sauce
1 Tbs sea salt
1/2 teaspoon black pepper
3 bay leaves
1/3 tsp oregano( fresh or dry)
In a large soup pot, sautee all veggies for about 8-10 minutes(Veggies dice and cut before making your soup). Add vegetable broth, and barley and cook everything about 35-40 minutes until barley is soft.
